Brussels Sprouts with Bacon
Such a classic combo that never goes out of date. Terrific as a side dish with any kind of braise or slow cook, or to partner roast chicken.

Ingredients
1 kg brussels sprouts
1 tbsp butter
4 rasher streaky bacon, finely diced
2 shallots, finely diced (or 1 small red onion)
salt and freshly ground black pepper, to taste
1/2 lemon, juice of
2 tbsp finely chopped parsley
Method
STEP 1
Trim and halve brussels sprouts, drop into a pot of boiling water and cook for 3 minutes.
Drain, cool under cold water and drain again.
Heat butter in a large frypan and cook bacon over medium heat until fat starts to run (about 5 minutes).
Add shallots or onion and cook for about 4 minutes.
Add brussels sprouts and stir-fry over high heat until tender and starting to caramelise (about 5 minutes).
Season, drizzle with lemon juice, sprinkle with parsley and serve hot.
NOTE
If you don’t like Brussels sprouts you could use broccoli instead.
