Caramelised Onions
You can use brown or red onions here. These are delicious in our Caramelised Onion and Goat Cheese Tart, tossed through salads or on bruschetta.

Ingredients
6 onions, thinly sliced
1 cup water
3 tbsp balsamic vinegar
2 tbsp butter
2 tbsp sugar
1 tsp salt
1 tsp finely chopped rosemary
Method
STEP 1
Combine all ingredients in a pot, cover and cook on medium heat for 15 minutes.
Remove the lid and cook, stirring now and then, until all the water has evaporated and the onions are just starting to stick on the bottom (about 15 minutes).
Allow to cool.
STORAGE
Store in a jar in the fridge for up to a week.
TIP
We like to use a food processor to slice the onions to save time.
