Christmas Cherry Compote Jam

This makes a wonderful topping for a Heaven Cake and also goes well with ricotta, yoghurt, cream, goat cheese, panna cotta and dairy-based desserts.

Ingredients

1kg cherries

8 whole star anise

2 cinnamon quill

2 cups water

2 tbsp sugar

1 tbsp ground cloves

Method

Remove the pits from the cherries, reserving any juices.

Place cherries, juice, and all other ingredients in a large pot and bring to a boil.

Remove from heat and allow to cool. Transfer to a large jar.

Keeps for 1-2 weeks in the fridge

Serve this with Heaven Cake
