Ingredients

1/4 green cabbage

a pinch of sugar

salt

1 carrot, peeled and finely shredded

1 stalk celery, thinly sliced on an angle

2 spring onions, thinly sliced

1/2 cup mayonnaise

Method

STEP 1

Finely shred cabbage and place in a bowl with a pinch of sugar and salt.

Work the sugar and salt through the cabbage with your hands to release the juices.

STEP 2

Toss through carrot, celery, spring onions, lime or lemon juice and mayonnaise.

Stir to combine.
