Lemon Gravy
This Lemon Gravy is a perfect match with roast chicken or turkey.

makes 2 cups
Ingredients
pan juices from roast
2 cups chicken stock, or vegetable cooking water
2 tbsp cornflour, mixed with 1/4 cup cold water
1/4 cup lemon juice, or to taste
flaky sea salt, to taste
freshly ground black pepper, to taste
Method
Place the unwashed roasting dish used for cooking the meat over a low heat on the stovetop.
Add vegetable cooking water, stock or water a little at a time, stirring to lift pan brownings. Bring to a simmer.
Slowly add the cornflour and water mixture, stirring constantly until gravy starts to thicken.
Simmer 5 minutes.
Stir in lemon juice, if using, and adjust salt and pepper to taste. Thin with extra vegetable cooking water or stock if desired.
