Lemony Cream Cheese Icing
This delicious cream cheese frosting is great on the Black Velvet Cake from Annabel's Through the Seasons TV series and book, and on carrot cakes or cupcakes.

Ingredients
100 g butter, softened
150 g cream cheese
3 cups icing sugar, plus extra to dust
a pinch of salt
2 tbsp lemon juice
Method
STEP 1
To make Lemony Cream Cheese Icing, blend butter and cream cheese in a bowl or food processor until smooth.
Beat in icing / confectioner's sugar and salt, adding a little icing / confectioner's sugar or water if necessary to achieve a spreadable consistency.
STEP 2
Spread over cake or cakes.
