Mediterranean Home-Cut Chips
The addition of feta takes these chips up a notch, inspired by those served at Jimmy Grants in Melbourne.

Ingredients
6–8 large potatoes, scrubbed
1/2 tsp salt
freshly ground black pepper, to taste
75g /21/2oz feta cheese, crumbled
1/4 cup fresh oregano, or 1 tbsp dried
GARLIC OIL
4 cloves garlic, peeled
1/4 cup extra-virgin olive oil
Method
Preheat oven to 200°C/400°F fanbake. Line an oven tray with baking paper for easy clean-up.
To make the Garlic Oil, place garlic and oil in a small pot.
Heat over a medium-low heat until bubbles form around the garlic (3 minutes).
Cook for 10 minutes, reducing the heat if garlic begins to brown. Remove from the heat and leave to cool.
Cut potatoes into long chips, about 1½cm/½in wide.
Arrange potatoes on oven tray, drizzle with garlic oil and season with salt and pepper.
Toss to coat, spread out in a single layer and roast until crispy and lightly golden (about 45 minutes).
Remove from the oven, sprinkle feta and oregano over the top and cook a further 5-10 minutes, until feta is browned.
Transfer to a platter and serve hot.
Method
NOTE
You can use rosemary or thyme in place of oregano.
