Pear and Radicchio Salad
This traditional French salad is so simple and yet never fails to deliver. You can mix up the greens as you please — we often add thinly sliced fennel, rocket, baby cos, and baby spinach too.

Ingredients
1 small head radicchio, leaves separated, torn
2 small endive, chopped
6 radishes, thinly sliced
3 small just-ripe pears, thinly sliced
1/2 cup walnuts, chopped
salt and freshly ground black pepper, to taste
HONEY MUSTARD DRESSING
3 tbsp extra-virgin olive oil
1 tbsp red wine vinegar
1 tbsp water
1 tsp Dijon mustard
1/2 tsp honey, or maple syrup
Method
DRESSING
To make the Honey Mustard Dressing, place all ingredients in a small jar and shake to combine.
Method
SALAD
To assemble the salad, arrange all ingredients on a serving platter.
Dress just before serving and season to taste.
