Raw Broccoli Salad
We love this fresh salad all year round.

Ingredients
1 large head broccoli, cut into florets, stalk shaved on a mandolin and leaves torn, or 2 handfuls broccolini, chopped
1 long red chilli, deseeded and finely chopped
1 clove garlic, crushed to a paste with ½ tsp salt
finely grated zest of 1/2 a lemon
2 tbsp extra-virgin olive oil
salt and freshly ground black pepper, to taste
Method
Combine all ingredients in a large bowl.
Massage with your hands to distribute flavours and soften the broccoli or broccolini.
Serve chilled.
