Rich Tomato Sauce
Made with canned tomatoes, this is a useful sauce to make in the winter when tomatoes are out of season. It’s so versatile that we'll often double or treble the recipe and freeze it in one-cup batches to kick-start meals.

Ingredients
2 x 400g/14oz cans crushed tomatoes
3 cloves garlic, crushed
1 cup red wine, or vegetable stock
1 cup water
2 tbsp tomato paste
1 tbsp sugar
1 tsp finely chopped rosemary
1 tsp thyme leaves
salt and freshly ground black pepper, to taste
Method
Combine all ingredients in a large pot and simmer, uncovered, for 30 minutes, stirring now and then.
