Spiced Zucchini Fritters

These fritters are bursting with flavour and make for an excellent meal, any time of day. This recipe serves one but you can easily scale it up if preferred.

Ingredients

1 zucchini, grated

1 egg

2 tbsp chickpea flour, or rice flour

1 tbsp chopped coriander, or parsley

1 tsp ground cumin

1/2 tsp ground turmeric

1/4 tsp salt

a pinch of chilli flakes

2 tbsp extra-virgin olive oil

TO SERVE

1-2 eggs, poached

1-2 small tomatoes, cut into wedges

a handful of rocket

a pinch of chilli flakes

Method

Place zucchini, egg, chickpea flour, herbs, spices, salt and chilli in a bowl and whisk with a fork to combine.

Heat oil in a frypan over a medium heat, swirling to coat the base. Cook generous spoonfuls of batter until golden and cooked through (about 2 minutes each side).

While the fritters are cooking, poach the eggs. Bring a pot of water to the boil with 1 tbsp white vinegar. Reduce temperature to a simmer. Crack each egg into a small bowl or cup and then gently lower into the water one at a time. Cook until just set (about 3-4 minutes) then use a slotted spoon to carefully remove from water.

Serve fritters with poached eggs, tomato, rocket and a drizzle of Green Summer Sauce. Sprinkle with chilli flakes, if desired.

SWAP IT OUT

Switch up the flavour profile by using mint in place of coriander or parsley and adding a little crumbled feta.
